A longtime Colorado favorite, Los Dos Potrillos entrusted our Swan Dive team with its very first ground-up location in Castle Rock. The design itself blends the luxury of a Mexican resort, drawing inspiration from Cabo San Lucas, with the charm of a traditional ranch nestled amidst agave fields. The culinary journey begins at the entrance to the massive 9,000 square-foot space where vibrant Mexican textiles that offer a glimpse into the art of handmade tortilla-making. Sweeping views of Castle Rock are celebrated throughout the space, making it bright and airy for customers to enjoy the views. Vibrant textiles and expansive leather seating create a sophisticated atmosphere, while large planters with agave plants separate booth seating, evoking a sense of dining within an agave field.
As a family business, the very name “Los Dos” translates to the Two Cults, representing the two sons now leading the family business. Throughout the space, there are detailed touches celebrating family and heritage – rope that intertwines with the lattice wood partition between the dining space and bar, a lasso if you will, equestrian details and local, horsetail-inspired artwork add a touch of the ranch life and custom fabricated chandeliers and wall sconces. Beyond that, the prominent bar at the center of the space for communal gathering offers a variety of tequila, flanked by two horse heads representative of the two sons.
This project brings to life a warm, inviting, and sophisticated space that honors Los Dos Potrillos' family heritage, Mexican roots, and connection to the local landscape.
